Healthy No Bake Brownies

Healthy brownies… These just had to be the first recipe to make an appearance on the blog! They are amazing! Chocolatey, gooey, fudgey and yummy, not to mention healthy! Packed full of fibre, antioxidants and good fats – these brownies are the perfect food for nourishing your body! There is no dairy, gluten or refined sugar in these bad boys (or should I say good boys) either! Now I must add, whilst these are much healthier than normal brownies, this doesn’t mean that eating the whole lot is a good idea. Everything in moderation!

Here is the super quick and easy recipe.

Ingredients

  • 500g of dates
  • 250g mixed nuts
  • 2 big tablespoons cacoa powder
  • 1 big tablespoon coconut oil
  • 2 tablespoons chia seeds

Pop some boiling water over the dates and leave them to soak.

Put the nuts in a food processor and whizz them up until they are finely chopped up.

Add the coconut oil, chia seeds and cacoa to the food processor too and process until all mixed.

Drain the dates and add them to the mixer and whizz until everything comes together. The mixture should be thick and sticky.

Put the mixture into a tin, press down so that it is even. If the mixture is too sticky put some water on your hands and that should make it a little easier to work with.

Pop the tin in the freeze for and hour and then cut into slices. Store in the fridge, or store in the freezer to keep them for a bit longer!
